I’m going to post a new superfood everyday this week. These foods are special because they are healthy and contain very high levels of antioxidants.

Many parts of your body are susceptible to oxidation, a process that destroys healthy cells. Your brain is one of the most fragile organs you have in this regard. Fortunately you can protect yourself and your brain with antioxidants.

Let’s begin with blueberries.

There has been plenty of research that shows eating blueberries significantly increases mental function. In one study, mice who were fed a blueberry extract equivalent to a human eating 1 cup of blueberries performed better in a maze and were more “exploratory.”

It’s thought that blueberries are powerful in part because they contain the antioxidant anthocyanin, which is what makes them blue. In addition, they contain high levels of Vitamin C, Manganese, and fiber, all necessary components of a healthy diet.

Try this recipe for a great tasting smoothie:

  • 1/4 c. creamy yogurt (I like Brown Cow Cream Top)
  • 1 c. blueberries (wild is best, organic next best. Avoid enourmous ones as they are mostly water)
  • 1/4 c. orange juice
  • 2 teaspoons of honey or pure maple syrup (agave nectar works well, too)
  • a few sprigs of fresh mint (you’ll love this part!)

Now take your smoothie and go enjoy this beautiful summer day!
